ULTIMATE TRES LECHES CAKE

All of us have something that really gets us excited, I'll tell you, for me it's this cake. You may be wondering why I have waited so long to post it. Let's just say I didn't want to share all my best recipes at once. There are many ways you can tackle this,if you're not a round cake fan you can also do it in a 9x13 pan and slice it down the middle and then fill it. Whatever you like. I know you will love this recipe. I usually have a little whipping cream leftover. I just put it in the fridge and we use it to put on top of our hot chocolate.

Oven Temperature 350

3 cups sifted all purpose flour
2 cups sugar
Tsp baking powder
Tsp salt
1/2 tsp baking soda
1 1/2 cups Mexican crema
2 cubes butter
4 eggs
2tsp vanilla

3 MILK MIXTURE

2 cups heavy whipping cream
1 can evaporated milk
1 can condensed milk


FROSTING

4 cups heavy whipping cream
1 cup powdered sugar

FILLING
1/3 of frosting cream
1 small package instant vanilla pudding
1 cup Mermelada de freza (recipe for this is on side bar or you can use store bought strawberry jam.)

6-8 Strawberries for center of cake and garnish
Sprig of mint
Canned mandarins for garnish

TINGA

I remember the first time I had this. Our family was at a party with friends my husband went to high school with. I distinctly remember this specific dish sitting on the table, I'll be honest, it really didn't look like something I was willing to try. My friend Stacey assured me that I would love it. A little hesitant I took a bite. Boy was she right! I loved it. I'm not a fan of cabbage but I really like this. After the party I had to have Cesar's friend that made it over to the house to teach me how to make it. That was several years ago and we have been loving it ever since. The best part...it's so easy to make!

2lbs chicken (any part you like)
2 cubes Maggie tomato chicken bouillon cubes
Swish of oil
1 white onion (cut into rings)
1 head of cabbage
2-3 chipotle peppers with 2-3 tbsp of sauce from can
1 can petite dice stewed tomatoes
salt to taste
15-20 tostadas
Crema
Hot sauce of choice

ROLES DE CANELA

Although these are not 100% traditional Mexican they have earned their place on the married to a Mexican site. These are Senor's favorite and if he loves them I know you will. ( He's really picky, but shhhhhh you didn't hear that from me.) I'm so excited for you to try these. If you're not a fan of nuts leave them out, if you like raisins add some before you roll the dough up. Either way you do it I know that you can't go wrong with these. I need to give a little shout out to Phil for teaching me how to make this wonderful dough. You can also use the dough to make some of the best rolls you'll ever have.

3 Tbsp yeast
1 Tbsp sugar
1 cup warm water

SEPARATE BOWL
1 cube butter
2 cups milk
1 cup water
1 heaping palm salt

8-10 cups flour


FILLING
1 cube butter (Half per roll.)
2 cups brown sugar (eyeball this to your liking per roll.)
1/4 cup cinnamon ("""""")

FROSTING
8oz cream cheese
2 cubes butter
3 Tbsp lemon juice
2 Tsp vanilla
4-6 cups powdered sugar (This will depend if you like your frosting stiff or runny.)

MERMELADA DE FREZA

This jam will be so helpful to you. I use this for so many different recipes. My ultimate Tres Leches Cake is one of them and since I will be making that for a birthday that is coming up I thought I should get this posted. I promise you can't go wrong having this on hand. I have several other jams I will share with you later.




8 cups strawberries
16 cups sugar
3 cups water
4 packages pectine (1.75oz size)

TAMALES VERDES

Hey there! This one has been a request for some time,sorry it has taken me so long to do these. Making tamales is not hard it is just a time commitment. There are short cuts I share in the video to cut some time out,but I still felt I should share the traditional way with you. Making tamales is a act of service and love for those that receive them. In fact I was thinking that some homemade tamales would make a great Valentines gift for the Mexican in your life. Take your time and get the whole family in the kitchen to help you. This is a great weekend project. This recipe will make 25-30 tamales if this is too many for your family to eat place the extras in a zip lock bag and they will keep for up to a month in the freezer.

ADD THE FOLLOWING 6 ingredients TO 8-10 CUPS BOILING WATER

1-2lbs chicken breast
1/2 bell pepper
Handful of cilantro
2 cloves garlic
1/3 white onion
2 maggie the chicken cubes


DOUGH

4 cups Tamale meseca
4-5 cups chicken broth
2/3 cup shortening
2/3 cup butter
2 tsp baking powder
1 tsp salt

FILLING SAUCE

13 tomatillos
3-4 serrano chiles
2 cloves garlic
handful of cilantro
1/3 white onion
1-2 tsp salt

25-30 corn husks

CARNITAS

Ohhh Yummy! I can gurantee you will be asking for seconds after you try this. Some people like to do this in a crock pot. I'll be honest, for this one you need to use the oven mainly because you will cook it uncovered for the last 30 minutes. You want the meat to crisp up a bit at the end and with a crock pot this really does not work too well.

4 Cloves garlic
1/2 White onion (half rings)
1 tbsp Seasoning salt
1 tsp Black pepper
1tbsp Oil

SAUCE

6 Tomatillos
Handful of cilantro
1/4 White onion
1 Clove garlic
2 Serrano chiles
Salt to taste

SALSA DE CHILE PASILLA

Be careful when you make this. The salsa will stain anything that it touches. I have white counters and I spilled some of the salsa on them. I had to use clorox to get it off. It's really good but a little messy.

SALSA DE TOMATES ASADOS

This is one of many salsas that are used as a topping for tacos de pollo, tacos de carnitas and many other popular Mexican tacos. I think this will be a great addition to your collection. I used my pancake griddle when I roasted my tomatoes and chiles on the stove.

Saturday I went for my weekly shopping trip to the Mercado. I can't brag enough about the great deals I find every time I go there. The Oranges were eight pounds for a dollar.... Here is a great healthy drink that is sure to become a family favorite. My kids and Senor love this and I know your will.

HORCHATA

This is a very popular drink in Mexico. Horchata is very simple to make and I promise your family will love it.

water 6-8 cups (depends on your blender)
1 cup of white rice soaked in water with cinnamon)
1 cinnamon stick
1 teaspoon of Mexican vanilla
1 teaspoon of almond extract
1/2-1 cup of sugar

TRES LECHES CAKE

Tres Leches Cake

1 box yellow cake mix (follow the box directions)
Milk Mixture
1 cup sweetened condensed milk ( I use the whole can)
1 cup of evaporated milk
1 cup of heavy cream

Homemade whip cream

2 cups of heavy cream
1/2 cup of powdered sugar
1 teaspoon of Mexican vanilla

Top with
1 cup of coconut
1 small jar of maraschino cherries


MEXICAN RICE

This is a traditional Mexican rice recipe that my husband's mother makes.








Mexican Rice
water
6 Roma tomatoes (depends on size)
1/2 onion (I like white)
3 garlic cloves (depends on size if large use two)
3 tomatoe chicken bouillon cubes
4 tablespoons of olive oil (vegetable oil is traditional)
1 cup of long-grain white rice
1 tablespoon of salt
2 carrots
2 potatoes (whatever you have)

ENCHILADAS VERDES CON POLLO

1 rotisserie chicken

5 tomatillos (If small use more)

1 Serrano Chile pepper (like it hot use more)

1 jalapeno chile pepper

1/2 cup of cilantro leaves

1 cup of canola or olive oil

1 tablespoon of salt

1/2 pound of Ranchero cheese or mozzarella

Agua de Tamarindo

3 liters of water

6 pods of dry tamarindo

1 cup of sugar

CHICHARRON CON NOPALES



Chicharron con Nopales


3 large cactus remove thorns
¼ lbs chicharron
1 white onion cut into half rings
2-3 cloves garlic
15 tomatillos
4 serrano chiles
Salt
Swish of oil

PONCHE



Ponche

3 1/2 liters water
3 cinnamon sticks
3 apples (red delicious not recommended )
1 large orange
4 inch pieces sugar cane cut in stripes
Two handfuls of pitted prunes
¾ cup white sugar
1 lb guavas peeled seeded and quartered ( optional if available where you live.)These can be found in the frozen foods section of your local latin market in the winter.

CHAMPURRADO





Champurrado

1 cup Maseca
4 cups water
6 cups whole milk
6 oz Mexican chocolate grated ( abuelita)
2 mexican cinnamon sticks

CEVICHE

I really feel bad I have not put this up sooner. I know that a lot of you were hoping that I would hurry up with this one. I hope you enjoy. This is a winner recipe.

Ceviche

½ lb shrimp cooked and deveined finely chopped
½ lb imitation crab finely chopped
4 chopped roma tomatoes
1 peeled chopped cucumber
1 medium white chopped onion
1 chopped avocado ( you can never use to many)
3 serrano chiles
1 cup chopped cilantro
½ cup lime juice
Few dashes of Cholula hot sauce
½ -1 cup Mexican style tomatoe sauce (el pato)
Salt to taste

This has to be one of my personal favorites. I love the savory, spicy, and sour flavor of this soup. This soup has a very bold flavor. If you are not acustom to strong flavor this may come as a surprise. Give it a try and tell me what you think.

Just in case my pronunciation was to poor for you to understand. Here are the names of the chilies.

Toast and then soak the chilies in 2 cups boiling water
4 Ancho chilies
4 Guagillo chiles
2 Cascabel chilies (I use California when I make this for the kids Cascabel are just to hot.)

2lbs cubed top round beef
2lbs boneless beef rib
¾ white onion
6 sprigs tyme
2 bay leaves
6 cloves of mined garlic
1 tbsp cumin
1 tbsp Mexican oregano

½ cup red wine vinegar
3 quarts water

SIMPLE FRIJOLES

This is a simplified version of traditional Frijoles. No one will ever know that you didn't spend hours in the kitchen making these. The Mexican in your life will definitely be fooled .

Swish of oil
1/3 white onion half rings
2 cloves of minced garlic
2 cans pinto beans

½ cup chopped Epazote leaves
Sprinkle with crumbled panela cheese

SIMPLE SALSA VERDE

This is very simple,but very tasty. If you want to kick up the flavor you can add a few pieces onion a clove of garlic and a handful of cilantro. We do it this way as well. Enjoy!

Simple Salsa Verde

This is not a recipe that you would want to fry hours before you plan on serving it. Chiles Rellenos is best when you eat it immediately after it comes out of the fryer. Yes, I know this is not the healthiest dish, but as I always say.... "Everything in moderation and you will be just fine."

This is a popular dish for breakfast in Mexico. I have several different ways I prepare this. Here is one of them. This is the most basic recipe. If you want to add more flavor to this you can add a clove of garlic and a few rings of onion to the blender.

20 corn tortillas

MEXICAN SPAGHETTI

This is a recipe for my mother- in-law's spaghetti. It's very simple and very delicious. You can't go wrong with this recipe. My children can be picky eaters and they love it. Bear with the video taping Secily was doing it. Someday she will be a pro




Mexican Spaghetti

6 cups of Roma tomatoes
4 cloves garlic (if pieces are big use less)
½ small yellow onion
½ cup water
11/2 tsp salt
Swish of oil
1lb spaghetti noodles
10 oz Oaxaca cheese cubed
12 oz cooked deli ham cubed

ATOLE DE ARROZ

I have to admit my kids get absolutely excited when I make this. I tend to make this much more often in the fall and winter. Yesterday was the first day of fall and today it's a little chilly outside, so I decided to make this wlth some Pan de Canela. Tonight we will gather around the table as a family and enjoy this treat. The kids can't wait and neither can I.

Atole de Arroz

12 cups water
1 cup long grain rice
1 cinnamon stick
4 cups of milk
1 tsp Mexican vanilla
1 cup sugar

MOLE POBLANO

This recipe will fool any Mexican into believing you spent all day in the kitchen. Shhhhhh this will be our little secret. What they don't know won't hurt their belly one bit. I did fail to mention during the video that during the 20 minute simmer you need to add a few whole cloves to the pot that you will remove with the cinnamon stick before you blend the sauce in the blender. Also don't forget a pinch of salt.

1 yellow onion

MMMMM........... All I can say about this recipe is "Yummy! Yummy! Yummy!". Here is a Quick Tip. Sliced radishes would also be delicious on these. The combinations for Sopes is endless. See you in the kitchen.

SOPA DE FIDEO

After I finished making this video I had a last minute thought I wanted to share. If you want this soup to take the place of a main dish, you can always add some carrots and potatoes after you add the water. I have made it this way several times. This is also very typical for Mexicans to do. Watch for Aries' disappearing act! It's quite funny!

1- 7 ounces bag of Fideo or angel hair pasta

1/2 cup of sour cream or Mexican crema

MEXICAN CORN ON THE COB

1 loaf of French bread or 5 pieces of torta bread (bolillo or teleras)
1/2 cup of butter
1 can of of refried beans ( watch frijoles video for homemade version)
1/2 pound of panela cheese or mozzarella cheese (grated)
1/2 head of lettuce
2 tomatoes
1 small can of jalapeno peppers
Salsa verde( see the video)
1 avocado
sauteed mushrooms (optional)
crema (sour cream)

TACOS DE POLLO

These tacos will definitely fool your Mexican. They will think you stopped off at the Taco stand on your way home. You will love this recipe. It is sure to be a family favorite.
