This is not a recipe that you would want to fry hours before you plan on serving it. Chiles Rellenos is best when you eat it immediately after it comes out of the fryer. Yes, I know this is not the healthiest dish, but as I always say.... "Everything in moderation and you will be just fine."

4- chilie poblanos
4 eggs
1 cup flour
Salt & pepper
11/2 cups white melting cheese ( Sandra likes to use queso fresco)
Oil for frying ( I use canola)
