Just in case my pronunciation was to poor for you to understand. Here are the names of the chilies.
Ancho, Guajillo, and Cascabel. Cascabel is the very hot one. Good luck. I think you will be amazed how easy this is.

Toast and then soak the chilies in 2 cups boiling water
4 Ancho chilies
4 Guagillo chiles
2 Cascabel chilies (I use California when I make this for the kids Cascabel are just to hot.)

2lbs cubed top round beef
2lbs boneless beef rib
¾ white onion
6 sprigs tyme
2 bay leaves
6 cloves of mined garlic
1 tbsp cumin
1 tbsp Mexican oregano
Ground pepper
½ cup red wine vinegar
3 quarts water
