Grilled Mexican Pizza

Hi there folks! I'm back with another yummy summer recipe that you and your family are sure to love. I wish I had more time to make videos, but life has kept me pretty busy. As I find the time I will be adding new delicious recipes. Remember if you are following me on twitter you will always be the first to know when a new recipes is on the site. I also wanted to take a minute to address a new request I have been recently receiving a lot, Facebook! Lately I have been receiving friendship requests from viewers. This was a surprise because I did not know that people new my last name. Anyways after some thought I have decided to open my Facebook to my website friends. There are a couple places in the video that the sun kept trying to peek through, sorry in advance for that. I get so annoyed!

DOUGH ( makes about 4 small pizzas)

2 packages Redstar quick rise yeast

1 1/2 cups warm water

1 teaspoon salt

3 1/3 cups flour

1 tbsp olive oil (grease you bowl with)

CHICKEN

9-10 chicken breast tenders

2 tbsp olive oil

1 lemon (squeezed)

1 tsp cumin

1 tsp Mexican oregano

salt/pepper

SAUCE (GREEN)

8 tomatillos

1 clove garlic

1 serrano pepper

1 poblano pepper

handful cilantro

1 Avocado (squeeze a lime over it to keep from browning)

4 tbsp Mexican crema (sour cream will also work)

salt

BEAN SAUCE (blend all ingredients in blender till smooth)

1 can black beans (Do not drain beans)

1/4 white onion

1 clove garlic

1 tsp Mexican oregano

salt

Other items you will need

1 red onion (for grilling)

4 Roma tomatoes

lettuce

pickled jalapenos

1lbs shredded Oaxaca cheese

Mexican crema

Tacos de Chorizo y Papa

Oh my goodness, can I tell you how much you are going to love these? Mmmm..these are mouth-watering delicious tacos. Today I had Avery doing the video taping so if it looks like this was shot from an airplane, that is why. I think he is like six foot seven now. I told him to sit down but of course he didn't want to do that. He also likes to give his own input during the taping and do lots of strange shots. I guess I should be glad he is helping me out.

So where is the Mexican you ask? He hasn't been seen in any of our recent videos and people are starting to wonder. Well I won't lie, we don't see him as much as we would like to either. The Mexican is busy working, working, working! In order for me to be a stay at home mom in this economy and be small business owners he has had to put in some long hours lately. We hope soon he will be able to make an appearance.

One of the ingredients in this recipe may be a little hard for you to find. If you have a Costco close by, then no sweat. If your Costco doesn't carry it you can request it at the customer service. The brand is Aidells and the name is Spicy Mango with Jalapeno Smoked Chicken Sausage here is the link to their website http://WWW.AIDELLS.COM If you don't have any luck with that then you can use two pounds of chorizo instead. 1lbs chorizo
1lbs Aidells Spicy Mango Jalapeno Smoked Chicken Sausage (about 5 links)
1 red onion
6 russet potatoes (peeled and cubed)
1 package Sazon Goya seasoning
swish of canola

24 white corn tortillas (remember to double up your shells)

TOP WITH
chopped red onion
cilantro
lime wedge
pickled jalapeno

Salsa de Frutas y Chips de Canela

This is one of those recipes where you can find me in the kitchen literally licking every last bit out of the bowl. Don't mind my kiddos, they were acting so goofy. I think by now you have all come to expect that, so I'm not too worried. These videos are what they are. I don't think Hollywood is going to be calling anytime soon to give us an Oscar for our performances.

Everyone in your family will loves this recipe. I failed to mention in the video that I will also occasionally add a little chile pequin to this just to give it a little unexpected kick and I also squeeze one lime over the apples to keep them from browning. 2 Granny Smith apples (squeeze a lime over the peeled apples to keep from browning)
1 mango
1 cup strawberries ( I won't lie I'm an eye-baller)
2 kiwi

CINNAMON CHIP PREP

1 package (8 count) flour tortillas
Butter flavor non stick cooking spray
1/2 cup sugar
2 tsp cinnamon

SAUCE

3/4 cup apricot pineapple preserve (Smuckers)
1/3 cup orange juice
1 tsp zest of orange
1 tsp cinnamon
1/2 tsp chile pequin (optional)

Torta de Milanesa

I'm running out the door to basketball and I wanted to hurry and get this posted. My life pretty much revolves around my kids schedules. If it sounds like I'm complaining, I'm not. I love it and I wouldn't have it any other way. The only problem is that their schedules don't leave me a lot of free time to do things like this. I hope you love the recipe. 1 1/2 cups Italian seasoned bread crumbs

2 eggs

1/3 cup milk

2 pounds top sirloin tip (thin slice)

This is another one of those... "Don't tell the Mexican how you did it recipes." I'm a strong believer that if he or she loves it, who cares how long it took you to make it. Let them think you spent all day. It's our little secret. (Wink, Wink!) Everyone loves these beans, they are full of flavor. With summer just around the corner there are so many different dishes you can pair this with. Wait till you see what we are making tomorrow! Oh baby! I already have the video ready to post and I know everyone is going to love it.

4-5 slices bacon
1/3 white onion
1 Serrano Chile
2 Roma tomatoes
2 cloves garlic
1 tsp Mexican oregano
2 15.5oz cans Pinto beans
Handful of cilantro
Salt to taste

Sangria

Are you ready for a nice refreshing summer drink? Well here is one of many I will be posting over the summer. At our house we do not drink alcohol so this drink is kid friendly. If you want yours to have alcohol ,all you need to do is replace the grape juice with red wine.

1 cup orange sections ( The video says one orange. If your orange is large then it should be enough.)

4-5 tbsp limeade concentrate

1 1/2 cups grape juice

Paletas Estilo Acapulco

Dear Cesar thinks this is such a clever name for this Paleta. You know me I wouldn't know. If you think it's just a total bomb of a name, don't be shy speak up maybe I'll take your advice and change the name. You know me I can make it but I can't come up with good names for my own creations. If you have a big familia you may want to double the recipe. This recipe will fill six of my molds. Summer is here.....Hip hip hooray! We are going to be making so many yummy summer recipes.

Finally.... I'm getting around to posting another video. From some of the emails I've received I think some of you thought I may have died. Nope I'm still kicking! Life has kept me so busy I have struggled to find any time to post a video. Sometimes I feel like my only purpose in life is to get children to all of their different activities and home again. (Don't get me wrong I do love doing it,but it just doesn't leave me a lot of free time.)

Yesterday the Meximobile broke down on the way to Aries' basketball camp. It's one thing when you break down in a normal looking vehicle and another when its in a van that looks like a ice cream truck or something from the circus. Let's just say it draws much unwanted attention. Anyways I had my big plan that I would get some of the videos I have already made posted and then of course that happened.

I have been getting a lot of emails and I have not had time to respond to all of them so if you emailed me and have not heard back, I'm working on it. Also if you ever have questions or comments that pertain to a specific recipe please put them in the comment box under the video. This will save me so much time. Many times I will receive the same question multiple times to my email box from different people. Basically if you put your questions in the comment box I will only have to answer the same question once. I do love to answer questions so please don't misunderstand, this will just save me a lot of time and also help out people with similar questions.
