Queso Blanco Dipping Sauce

This recipe was a request from a gal named Cheri. Hi Cheri! I sure hope this it what you were looking for. If not I know you will love it anyways. For any of you that may be watching for the first time I thought I should make it clear that the camera man is my husband. I don't want anyone to be confused after watching this. 1 small white onion (chopped)

4 tbsp butter

1 1/2 tbsp flour

1 cup milk

1 cup whipping cream

2-3 chopped pickled jalapenos

8 0z shredded Oaxaca cheese

8 0z shredded pepper jack cheese

15-20 tortillas cut into wedges ( You should be able to get 8 pieces out of each tortilla.)

Oil for frying

Hey there friends! I have returned from spring break. Today we will be making Gorditas. One of my new found fabulous friends Jackie sent this recipe in and suggested I make it for you. Since this was something we already make I mixed Jackie and my recipe together for your tasting enjoyment. This is cute Jackie and one of her twins.








GORDITAS

2lbs Top Sirloin Steak or Diezmillo (thin cut)
3 cups Maseca
1 1/2-2 cups water
1 tsp salt
1 tsp baking soda
2-3 cups Frijoles (checkout my recipe for these)


TOP WITH...
Lettuce
Quesso (oaxaca)
Tomato
Onion/ serrano chile (I like to saute these with a little oil in a pan together)
Crema
Cholula (hot sauce)

MARINADE
Juice of 3 limes
Couple swishes of canola
Salt
1 tsp Mexican oregano
2 cloves garlic
1/2 white onion rings
Handful of cilantro
1 tsp chile pequin powder

Hey guys!

Sorry! I've been busy doing mommy duties the last few days. Avery had a basketball tournament. Here's the good news... He won the dunk it contest! This was a really fun experience for him. I'm just glad we are not having Little Cesears pizza for dinner again, two days in a row is all I can handle. Here's a peek at two of his dunks. Notice in the first one his eyes are covered. Of course Cesar had to drop the camera on the best one so I only got two of the three dunks. I think Cesar was a little too excited.

Happy Easter! My kids are on spring break next week so we will see if I get anything posted! I promise I will do my best! You can always refer to the archives for something until I get back.

Pozole Verde

The kids are suppose to be in bed by now, but of course I can still hear the pitter patter of their feet run up and down the stairs. I'm so tired tonight, but I want to get this ready so it can post in the morning. I make every effort for this stuff not to interfere with my kids needs. I try as much as possible to work on this stuff when they are in bed.
Here is another fabulous recipe to add to your collection. I would have to say that hands down, Pozole is one of the most popular thing we eat here at our house. My kids love it so much they usually ask for me to make it on their birthdays. It doesn't matter to them if it is Pozole Rojo or Pozole Verde they love them both. I'm confident that your family will love this recipe.

2 Chicken breasts/2 chicken thighs
2 Maggie chicken bouillon cubes
3/4 white onion rings
3 cloves garlic
1 gallon water
1lbs tomatillos
2-3 serrano chiles
salt
Handful cilantro
5 150z cans white hominy

Hey guys, this is another Tina creation. I'm always busy making delicious creations to please my Mexican. Here is one that he loves to death. I have struggled with a name for this. Maybe you can help me. I would like the name to be in Spanish. If you have any good ideas you can post them in the comment box below. No idea is a bad one, so please don't be shy! Have a fabulous day. I will be back next time with a good old fashion authentic traditional Mexican dish. But for today I was feeling a little rebellious. I get that way sometimes. CAKE BATTER

1 stick of butter
1 1/2 cups brown sugar
3 eggs
3 bananas (smashed)
1 cup Mexican crema
2 tsp vanilla
1 tsp baking soda
1tsp baking powder
2 1/2 cups flour

SAUCE

1 cup heavy cream
1/2 cup Carmel sauce
1 cup sweet condensed milk

Enchiladas Rancheras

I'm running around like crazy today! Enjoy the video! I'll let it speak for itself!

RANCHERO SAUCE
3lbs. Roma tomatoes
3 serrano chiles
1/2 white onion (use other half of onion to fry sauce in.)
2 cloves garlic
Cinnamon stick
1 tsp. cumin seed
1 tbsp. crushed Mexican oregano
1 tsp. sugar
handful of cilantro
1/2 cup raisins
1/2 cup slivered almonds

FILLING
2 lbs. Beef Tenderloin cubed
3/4 white onion (chopped)
3 cloves garlic
salt/pepper

15-20 White corn tortillas
oil for frying

TOP WITH...
Red shredded cabbage
Crema
Queso Fresco
Slivered Almonds
Raisins
Cilantro
Pickled Jalapenos

You really can't believe where I found some of my videos. (Places I would never ever want my kids or there friends faces to be.) This way I have a little more control over what I put out there.
