Fatmime I read a little about you on your page and can I just say...Thanks so much for keeping it funny and clean. The world needs a lot more good clean humor. These days all we ever see is people that are willing to stoup pretty low for a buck.( I would love to see a song about a six foot tall gringa cooking Mexican food.) Whatda you say? Hmmmm maybe?

Paletas de Hielo con Mango,Limon y Chile
Summer is just around the corner and what better way to kick off the new season then with some of these delicious paletas. These are so easy and healthy. It' doesn't matter what the occasion, these are sure to put a smile on any ones face. Keep watching throughout the summer, I will be adding a new paleta recipe each week. Ohhh yummy!

2-3 mangos (depends on size)
2 limes
2 tsp. sugar ( use splender if you want it to be sugar free)
1/2 cup water
Klass chilito en polvo ( chile powder) or chile pequin

Pipian de Chuletas de Puerco
For many Mexicans this recipe is simply known as "Pipian". If you're not a pork fan you can substitute the pork for a whole cut up chicken and follow the same procedure. FYI.... Cesar has been cutting these videos for me lately. I usually don't have much say and when I realize that he has cut out something important, it's too late to go back and change it. Whats a girl to do? Don't get me wrong, I'm grateful, but he is a little too "cut happy" lately. So here's the stuff you missed. I added about a cup of chicken broth to the second sauce I put in the blender and about a half of a cup broth to the poblano pepper that I put in the blender. I also add about two cups of chicken broth to the final sauce in the pot. After you add your meat to the sauce you want to let it simmer covered for about 20 minutes on medium heat. Fewwww! I hope you get this and it makes sense. If not, you can leave me a comment in the box below or email me with any further question and I will help you figure out anything that doesn't make sense. 6 - 1/2 inch think bone in pork chops
20 tomatillos
1 white onion
3 cloves of garlic
1 jalapeno
2 Serrano peppers
2 pablano peppers
1 1/2 cups cilantro
1/2 cup epazote
3 1/2 cups chicken broth
1 cup toasted pumpkin seeds
1 tbsp lard
oil
salt/pepper

Please excuse me because we all know what a nerd I am. When you watch this video here are a few things you need to know. I'm really such a kick back gal, but when it comes to pronouncing some of these things I make, it just looks so unnatural coming out of my mouth. Here's the thing, I'm an excellent learner when it comes to making something hands on, but if you give me a book and tell me to memorize something, forget it! How I know how to make all of these wonderful dishes is a mystery when I can't pronounce half of them. Anyways try to cut me some slack. I really am working on it. Also if it seems rushed, I too am aware of this. Ever since I left youtube my time has been cut in half. A blogger video really can't go more then five minutes. I'm working on a solution to this problem. I thought it might be fun to do a live show once a week. I may start doing this soon and then I will have all the time in the world. 4 roma tomatoes
1/2 red onion
2 avocados
2-3 cactus (depends on size)
20 large shrimp (raw, tail on ,deveined)
1 jalapeno (more if you like the heat)
1/2 cup cilantro
3 cloves garlic
1/2 cup extra virgin olive oil
salt
4 limes
Serve in lettuce cups or toasted corn tortillas.

I'm sorry you haven't seen a post this week. I have been sick with a cold and I lost my voice. I tried to make a video the other day, but I kept coughing so I stopped. I'm hopping by Tomorrow I will have my voice back well enough to make a video.
