Paletas de Coco

Quick, easy and probably the best you will ever taste! No joke! Mr. Mexican was in such a hurry to eat these that he threw one on a plate and video taped it while I was gone so he and the kids could eat them, hence the lovely display at the end! Nice job sweetie! Watch out food stylists everywhere Mr Mexican has arrived with all his skills.

1 1/2 cups Goya coconut milk
1 cup condensed milk
1 handful coconut flakes

Paletas Estilo Acapulco

Dear Cesar thinks this is such a clever name for this Paleta. You know me I wouldn't know. If you think it's just a total bomb of a name, don't be shy speak up maybe I'll take your advice and change the name. You know me I can make it but I can't come up with good names for my own creations. If you have a big familia you may want to double the recipe. This recipe will fill six of my molds. Summer is here.....Hip hip hooray! We are going to be making so many yummy summer recipes.

1 banana


1 cup pineapple chunks


3/4 cup fat free condensed milk


3-4 tbsp frozen limeade concentrate

Paletas de Hielo con Mango,Limon y Chile

Summer is just around the corner and what better way to kick off the new season then with some of these delicious paletas. These are so easy and healthy. It' doesn't matter what the occasion, these are sure to put a smile on any ones face. Keep watching throughout the summer, I will be adding a new paleta recipe each week. Ohhh yummy!

2-3 mangos (depends on size)

2 limes

2 tsp. sugar ( use splender if you want it to be sugar free)

1/2 cup water

Klass chilito en polvo ( chile powder) or chile pequin

PALETAS DE SANDIA CON CHILE Y LIMON

So I absolutely have a thing for Mexican Paletas. I will never forget one of my trips to Mexico when I discovered the Pina with chile ones. I know, call me crazy but I literally went to every little mercado in Cesar's village and bought them out. I think the people at the stores must have been thinking crazy gringa what is she going to do with all of those paletas? I ate them, every last one. I was a mean mom I didn't even want to share even one of them. Anyways, I decided I needed to crack the secret code to making these. Cesar says "I did it!" I hope you have fun making these and of course eating them. Try any jello flavor with these I know they are all yummy, I've tried just about every flavor combination.







1Tbsp butter
3/4 cup sugar
1/2 cup light corn syrup
1Tbsp lime juice
1 3oz package melon fusion Jello
1Tbsp chile pequin powder
